TORTA OD JAGODA / STRAWBERRY CAKE

TESTO:
  • 1 šolja brazilskih oraha
  • 1 šolja indijskih oraha
  • 1/2 šolje suvog grožđa
  • prstohvat morske soli
Suvo grožđe prvo namočiti u vodi pola sata i zatim ocediti. Samleti sve satojke u multipraktiku ili sokovniku sa nastavkom za mlevenje, promešati dok se ne dobije testo. Testo rukom rasporediti i utapkati u model prečnika 20-22cm.
CRUST:
  • 1 cup brazilian nuts
  • 1 cup cashews
  • 1/2 cup raisens, soaked
  • pinch sea salt
First soak raisens for 30 minutes. Mix all ingredients in food processor into a smooth dough. Press the dough evenly into the bottom of cake model with 20-22cm in diametar.

FIL OD JAGODA:
  • 1 šolja indijskih oraha
  • 1/2 šolje kokosovog brašna
  • 3 šolja iseckanih jagoda
  • agavin sirup po želji
  • prstohvat morske soli
  • 1dl kokosovog ulja
Sameleti indijske orahe u čistom električnom mlinu za kafu ili sokovniku sa nastavkom za mlevenje. U blenderu prvo samleti jagode i zatim postepeno dodavati brašno indijskih oraha i kokosovo brašno. Na kraju dodati na vodenoj pari otopljeno kokosovo ulje i mleti još malo.
Za dekoraciju, napraviti rub od jagoda narezanih na polovine (kao na slici). Preliti fil preko testa i staviti u frižider dok se priprema preliv od jagoda.
STRAWBERRY FILLING:
  • 1 cup cashews
  • 1/2 cup coconut, shredded
  • 3 cups strawberries
  • agave nectar, optionally
  • pinch sea salt
  • 1dl coconut oil
Grind cashews in a coffee grinder or food processor into fine flour. First bland strawberries in high speed blender. Then add cashew flower and coconut flower and blend till smooth. At the end add coconut oil (melted in water bath) and bland to incorporate. 
For decoration, arrange strawberries like in picture. Pour filling over crust and leave in the fridge while preparing strawberry frosting.

PRELIV OD JAGODA:
  • 2 šolje iseckanih jagoda
  • 4 kašike chia semenki
U blenderu samleti jagode, dodati chia semenke, promešati kašikom i ostaviti u frižideru pola sata da se napravi žele. Preliti ga preko fila od jagoda i model vratiti u frižider za još nekoliko sati. Pre serviranja skinuti obruč modela.

STRAWBERRY FROSTING:
  • 2 cups strawberries
  • 4 tablespoons chia seeds
Blend strawberries, add chia seeds and stir well with spoon. Put to rest in fridge for 30 minutes. It will turn to gel. Pour it over strawberry filling, and refrigerate for few more hours before serving.
