TORTA OD MANGA / MANGO CAKE

torta, cake, mango, mak, poppy, raw, presno, nuts free

TESTO:
  • 1 šolja maka
  • 1 šolja kokosovog brašna
  • 1 šolja namočenog suvog groždja
FIL:
  • 2 manga, oljušćena i bez koštice
  • 1/2 šolja kokosovog brašna
  • 1dl kokosovog ulja
  • sok od pola limuna
  • 1 kašika chia semenki
CRUST:
  • 1 cup poppy
  • 1 cup shredded coconut
  • 1 cup raisins, soaked
FILLING:
  • 2 mangoes
  • 1/2 cup shredded coconut
  • 1dl coconut oil
  • juice from 1/2 lemon
  • 1 tablespoon chia

Za testo, prvo suvo grožđe namočiti u vodi 20 minuta. Samleti ih i dodati kokosovo brašno i mak. Sve dobro izgnječiti rukom dok se ne dobije testo. U model za tortu, prečnika 22-24cm, rukom ravnomerno razvući testo.
Mango oljuštiti, iseckati i samaleti u blenderu zajedno sa kokosovim brašnom, sokom od limuna i chia semenkama. Kad se dobije glatka smesa, dodati kokosovo ulje istopljeno na vodenoj pari. Mleti jos par sekundi. Smesu saliti preko testa u medel i ostaviti da se ohladi u frižideru. Pre serviranja tortu posuti kokosovim brašnom.

Soak raisins in water for 20 minutes. Grind them and add poppy and shredded coconut. Use your hand to mix them into a dough. Spread it on cake model (22-24cm in diameter).
Peeled and pitted mangoes blend with coconut, lemon juice and chia seeds till smooth. Add coconut oil, melted in water bath and blend for few more seconds. Poor filling onto the crust and leave it to cool in fridge. Before serving toss some shredded coconut on top.
