HELJDINA PIZZA / BUCKWHEAT PIZZA

TESTO (za dve osobe):
  • 1 šolja heljde
  • suvo povrće (paradajz, paprika) po želji
  • začini (bosiljak, origano)
  • morska so
  • 3-4 kašike maslinovog ulja
SOS OD PARADAJZA:
  • 2 šolje iseckanog paradajza bez semenki
  • 2-3 kašičice začina (bosiljak, origano)
  • suvo povrće (paradajz, paprika) po želji

CRUST (for two):
  • 1 cup buckwheat, soaked and sprouted
  • dehydrated vegetables (tomato, paprika)
  • spaces (basil, origano)
  • see salt
  • 3-4 tablespoon olive oil
TOMATO SAUCE:
  • 2 cups diced tomatos
  • 2-3 teaspoons spices (basil, origano)
  • diced dehydrated vegetables (tomato, paprika) optionaly
Heljdu namakati u vodi 6h. Zatim je ocediti, isprati i pustiti u cetki 24h. Pre mlevenja, još jednom je dobro isprati. Samleti je zajedno sa suvim povrćem, dodati začine, so, maslinovo ulje i dobro promešati. Testo (puter) podeliti na dva dela i na papiru za pečenje, razmazati u oblik pice debljine 3-4mm. Testo sušiti u sušaču ili rerni na 45C, 8h na jednoj strani i još 4h na drugoj strani (po potrebi i duže, zavisno od debljine pice).

Za sos, sameleti paradajz u blenderu, sipati u cediljku i pustiti par minuta da višak vode iscuri. Sosu dodati začine i iseckano sušeno povrće po želji i pustiti još par minuta da se sastojci hidriraju. Sos namazati na pice, i odozgo poređati šta god želite. Kombinacije su neograničene.
Mi smo stavili: sveže listove bosiljka, tikvice narezane na trake, papriku narezanu na trake, obruče luka i crne masline.

Kad je pica poređana, može se odmah jesti, ali će biti još ukusnija ako se još dva sata pusti u sušaču ili rerni na maksimalno 45C.

Soak buckwheat for 6h, than sprout it for 24h. Drain and rinse. Put buckwheat, dehydrated vegetables, spices, see salt and olive oil into food processor. Bland to a smooth consistency. Spread dough onto Teflex-lined dehydrator racks. Spread the butter into rounds 3-4mm thick. Dehydrate for 8h, turn the crusts over, peel of Teflex sheets and dehydrate for another 4h.

Tomato Sauce: Blend tomatos. Strain them for 5min to allow tomatos releas the water. Add spices and dehydrated vegetables and leave for another 5min. Spread the sauce over the crusts. Toss whatever you like on top. there are endless combinations.
We arrange basil leaves, zucchini stipes, paprica stripes, onion rings and olives.

You can eat your pizza right away, or you can dehydrate it for additional 2h in dehydrator or in oven not over 45C.
